Kate Copsey: New Blogger Introduction

Kate was raised in England and moved to the USA after getting married. Therefore, both countries influencer her cooking and baking. Kate was also diagnosed with Celiac Disease as a child. Since, she has managed to create meals from scratch that are both mainstream and gluten free. That said, she raised four boys and includes some things that just cannot be made gluten free for them. She is also an avid gardener and loves to bring fresh herbs and vegetables into the meals as well.

Kate, and her husband, moved to a small town in South Carolina in 2017. There, she started a small Farmers’ Market in the town and garden. She is slowly figuring out when to plant vegetables in this area where year-round growing is possible.

Kate is also a great fan of early 20thCentury cook books that include interesting recipes using a full dozen eggs, or that are ‘put into moderate oven until done’. Figuring out how to adapt the ingredients and cooking is always a trial but great fun when they work! The bookcase is also full of more modern cookbooks that Kate has picked up over the years, from both sides of the Atlantic. Each week it is fun to make the menu for the following week from these cookery books. Sometimes working from modern books though is as frustrating as working with the early cookbooks because images that are professionally adjusted don’t always look like what comes out of the oven.

Kate is a freelance garden writer and has two books on the market. Kate enjoys giving talks and presentations.
